04 - In a small bowl, whisk together mayonnaise, sour cream, minced garlic, smoked paprika, chili powder, ground cumin, lime zest, lime juice, kosher salt, and black pepper until smooth.
05 - Add cooled pasta to the corn and vegetable mixture. Pour in dressing and toss thoroughly until evenly coated.
06 - Fold in crumbled Cotija cheese and jalapeño if using. Taste and adjust seasoning as desired.
07 - Serve chilled or at room temperature with extra lime wedges alongside.

# Expert Tips:

01 -
  • Sneaking in charred corn gives a smoky sweetness that feels like a hidden treat.
  • The creamy dressing soaks into the pasta, making each forkful tangy and satisfying.
02 -
  • Skipping the step of rinsing the pasta leaves the salad starchy and sticky, so don't forget it.
  • Charred corn transforms the flavor far beyond plain boiled kernels; it's worth the extra few minutes.
03 -
  • If charred corn sticks, just scrape up the bits—they add a real punch to the salad.
  • Finishing with fresh lime right before serving makes all the flavors pop.
